Salted Caramel Espresso Martini
Vodka Cocktail
Here's what you need to make our Salted Caramel Espresso Martini cocktail recipe...

1 single shot of freshly made espresso
-
10ml coffee liqueur (we like Conker Cold Brew Coffee Liqueur)
-
10ml salted caramel syrup
-
Ice
-
Coffee beans, for garnish (optional)

Chill your glass by filling it with ice and make your shot of espresso. Add ice to your cocktail shaker then pour in 25ml of Barry Island Organic Welsh Vodka, 10ml of coffee liqueur and 10 ml of salted caramel syrup (see our tip at the end of this post for details of how to make your own salted caramel syrup). Add your shot of espresso. Shake vigorously until well-chilled. Remove the ice from your glass and strain the liquid from your shaker in to your glass. You can use a classic martini glass or we love a Nick & Nora glass. Finally garnish with coffee beans, if desired.

Pineapple Daiquiri
Rum Cocktail
This rum cocktail is delicious, looks great and it's easy to make. Our Pineapple Daiquiri recipe uses just four main ingredients. To make this summery daiquiri at home you'll need:

50 ml Barry Island Spiced Rum
-
25 ml Pineapple Juice
-
20 ml Lime Juice
-
15 ml Simple Syrup
-
A strip of lime zest to garnish

Add ice to a cocktail shaker. measure and pour in the Barry Island Rum, pineapple juice, lime juice and simple syrup.
The secret to the foam in this cocktail is adding lots of tiny air bubbles into your cocktail so hard shake your cocktail shaker for 5 seconds.

If your not serving over ice, double strain the liquid into your glass. If you are serving over ice then a single strain is fine.
​
Garnish with a twist of lime zest.

Pink Gin Fizz
Pink Gin Cocktail
This pink gin cocktail is fresh and fruity, not only does it taste great but it looks fantastic too. It's definitely a cocktail we'll be reaching for as the weather gets warner.

50ml Barry Island Pink Gin

25ml Lemon juice
-
25ml Raspberry syrup
-
50ml Sparkling Elderflower
-
Ice (for shaking)

Lemon slice (to garnish)

Load your cocktail shaker with ice before pouring in your Barry Island Pink Gin, lemon juice and raspberry syrup. Put the lid on your shaker and give it a good shake before straining the liquid into a glass - we think our pink gin fizz looks great in a coupe but this drink works just as well in a hi-ball.
To finish making your cocktail, add the sparkling elderflower and garnish with a slice of lemon.

Barry Island Negroni
The Blood Orange in our award winning Welsh Dry Gin lends itself to beautifully to this classic Italian cocktail.
Here's what you'll need to make a classic Negroni at home:

25ml Vermouth (we love Discarded Cascara Sweet Vermouth)

25 ml Campari
-
Ice
-
Orange slice to garnish

Pour all the ingredients in to a glass and give it a gentle stir to blend the spirits.

Add ice cubes in to a tumbler and pour your spirits mix over the top. Garnish with a slice of orange to finish.
​
There you have it, a simple and elegant Negroni. Enjoy!
Yuzu Tom Collins
We love sharp, bold, punchy citrus flavours. Our take on a traditional Tom Collins cocktail adds Yuzu (an East Asian citrus fruit) to really boost up those zesty lime notes.
​
Named after a hoax that was doing the rounds in New York in 1874, the Tom Collins is a long drink often served in a tall, thin glass (referred to as a Collins glass or high ball). It's really refreshing and super easy drinking. Our citrus-forward dry gin really complements the lime juice and yuzu seltzer in this classic cocktail - we're big fans. Of course, if you don't have any Yuzu seltzer this drink is just as delicious if you use soda water.

Here's what you'll need:

Cocktail shaker

25ml lime juice
-
25ml sugar syrup
-
125ml Yuzu seltzer (we like Something and Nothing's Yuzu Seltzer). Or feel free to use soda water instead.

Ice
-
Lime wedge to garnish

Add ice to your cocktail shaker and pour in the gin, lime juice and sugar syrup. Shake for 5 seconds to blend and cool the ingredients.
​
Strain the mixture in to a tall glass. Add ice cubes then add the yuzu seltzer. Garnish with a wedge of lime to finish.


Spiced Rum Cooler
This cocktail has a lovely balanced warming sweetness and is the perfect drink as the nights start drawing in.
Our delicious Spiced Rum Cooler is really easy to make, here's what you need:

50ml cloudy apple juice (we love Flawsome's Sweet and Sour Apple Juice)

25ml Cinnamon syrup
-
25ml Soda Water (we love Llanllyr's Source Club Soda)
-
Ice
-
Garnish with dehydrated apple slice or, we also love it with a slice of orange.

Pour all the ingredients in to a glass and give it a gentle stir to blend everything together.
​
Add a couple of ice cubes and garnish to finish.
​

Who doesn't love a classic G&T? Simply grab your favourite glass, add ice and a slice of lime and mix Barry Island Gin and Tonic water to you preferred balance. Also works great with soda water.

Because Blood Orange and Lime Zest are the equally balanced lead botanicals in our Welsh Dry Gin why not try your Barry Island Gin and Tonic with a slice of orange to bring out the orange notes in the gin.
